During steam distillation of the beneficial plants used to make essential oils, the water and oil separate, but not all the aromatic compounds stay with the oil. A few hang behind in the water, giving it a gorgeous fragrance and therapeutic properties, too. This byproduct is sold as a hydrosol, literally "water solution." Hydrosols can be used as a toner, to set makeup, or just applied to freshen the face, such as after a workout.
